Ingredients:
- 1 LB small red poatoes
- 1 1/2 Tbsp white wine vingar
- 1 Tbsp Dijon mustard
- 1/2 tsp salt
- 3 Tbsp olive oil
- 1/4 diced red bell pepper
- 2 green onions thinly sliced
Directions:
- Cook potatoes in large saucepan in boiling water for 25-30 minutes. DRain and cool. Cut into thin slices.
- Whisk together vingar, mustard, and salt in large bowl.
- Whisk in olive oil until well blended.
- Add potatoes, bell pepper and onions.
- Toss gently to coat.
