Colorful Potato Salad

Portion: 4 servings
Ingredients:

  • 1 LB small red poatoes
  • 1 1/2 Tbsp white wine vingar
  • 1 Tbsp Dijon mustard
  • 1/2 tsp salt
  • 3 Tbsp olive oil
  • 1/4 diced red bell pepper
  • 2 green onions thinly sliced

Directions:

  • Cook potatoes in large saucepan in boiling water for 25-30 minutes. DRain and cool. Cut into thin slices.
  • Whisk together vingar, mustard, and salt in large bowl.
  • Whisk in olive oil until well blended.
  • Add potatoes, bell pepper and onions.
  • Toss gently to coat.
