Ingredients:
Beef Roast (or any type of beef cooked any way you like)
8 cups vegetable or beef stock
3 tsp salt
1/4 tsp thyme leaves or marjoram leaves
6 peppercorns or 1/4 tsp pepper
1 bay leaf
2 medium potatoes, peeled and cubed
2 medium carrots, sliced
1 small onion, chopped
16 oz. tomatoes (undrained)
12 oz corn (drained)
Directions:
- Put your beef in a crock pot and cook it all day with liquids and seasonings that you prefer.
- After cooking all day in a crockpot start the soup base. In a Stock Pot add 8 cups Vegetable Stock or Beef Stock, add all ingredients. Turn the heat on medium high and cover with a lid.
- Now prepare the meat in the crockpot by cutting it up in cubes and adding it to the stock pot. Continue to simmer covered for 30 minutes until vegetables are tender.
