Creamy Chicken Enchiladas

Ingredients:

  • 2 10oz cans rotel
  • 2 C chopped chicken
  • 1 8oz cream cheese
  • 5 green onions chopped
  • 1 8 oz carton sour cream
  • 8 flour tortillas
  • 1 C shredded cheddar cheese

Directions:

  • Stir together 1/4 C rotel, chicken, cream cheese, and green onions
  •  Stir together remaining rotel and sour cream. Set aside.
  • Microwave tortillas on high for 15 seconds
  • Arrange chicken mixture down center of tortillas. Roll up and place seam side down in a lightly greased baking dish.
  • Bake uncovered at 350 for 30 minutes.
  • Pour sour cream mixture over enhiladas and top with cheese.
  • Bake 10 more minutes.
  • Let stand 15 minutes before serving.
