Ingredients:
- 2 10oz cans rotel
- 2 C chopped chicken
- 1 8oz cream cheese
- 5 green onions chopped
- 1 8 oz carton sour cream
- 8 flour tortillas
- 1 C shredded cheddar cheese
Directions:
- Stir together 1/4 C rotel, chicken, cream cheese, and green onions
- Stir together remaining rotel and sour cream. Set aside.
- Microwave tortillas on high for 15 seconds
- Arrange chicken mixture down center of tortillas. Roll up and place seam side down in a lightly greased baking dish.
- Bake uncovered at 350 for 30 minutes.
- Pour sour cream mixture over enhiladas and top with cheese.
- Bake 10 more minutes.
- Let stand 15 minutes before serving.
