Breakfast Bake

Ingredients:

1/4 cup chopped green onions

1/4 cup chopped red bell pepper

3 cups hash browns

4 slices of partially cooked bacon chopped

3 TBL bacon drippings

4 eggs

1/2 cup marble cheese shredded

Directions:

Preheat oven to 450 F.

In a large bowl combine onions, pepper, potatoes, bacon and drippings.  Spread evenly in a 9×9 baking dish.  Bake 10 minutes, stir and bake an additional 10 minutes.

Reduce oven temp to 325 F.

Make four impressions in the  dish, put one egg in each impression.

 Return to oven and bake 15 minutes.  Sprinkle cheese over dish
