Beef and Broccoli

Ingredients:

  • 1/4 Lb broccoli
  • 1 LB lean boneless beef steak such as top round, flank or sirloin
  • 2 Tbsp soy sauce
  • 1 Clove garlic
  • 1/4 vegetable oil
  • 2 Tbsp water
  • Cooking Sauce:
  • 1 1/2 Tbsp cornstarch
  • 1/4 tsp ground ginger
  • dash of cayene
  • 2 Tbsp dry sherry
  • 1 1/4 C beef broth

Directions:

  • Cut off and discard tough ends of broccoli stalks. Cut broccoli into small flowerettes.
  • Cut beef with the grain into 1 1/2 inch strips.
  • In a bowl mix beef, soy sauce, and garlic. Let marinade for 15 minutes.
  • Meanwhile combine all ingredients in cooking sauce and set aside.
  • PLace wok or skillet on high heat. When hot add 1 tbsp of vegetable oil.
  • When oil is hot add half of beef mixture and stir fry until meat is browned. About 2-3 minutes. Remove from wok and set aside. Repeat to brown remaning meat using 1 tbsp more oil.
  • Pour remaining 2 tbsp of oil into wok opr skillet. When oil is hot add broccoli and stir fry about 1 minute. Add water to cover and cook stirring frequently until broccoli is tender crisp to bite. About 3 more minutes.
  • Stir cooking sauce. Add to wok along with meat. Stir until sauce boils and thickens.
