Ingredients:
1/2 Lb pinto beans
1/4 salt pork chopped coarse
1 C onion chopped
1/2 C chopped bell pepper
1 clove garlic crushed
1/4 tsp oregano
1/4 thyme
1 tsp salt
black pepper to taste
cayenne to taste
1 C tomato sauce
1/2 Lb pok sausage
1/2 C sliced green onions
Directions:
In a large heavy saucepan combine the beans, salt pork and 1 quart of water. Bring water to a boil and boil the beans for 2 minutes. Remove the pan from the heat and let the beans stand covered for 1 hour. Bring the liquid to a boil and simmer the mixture covered strirring occassionally for 45 minutes. Stir in onion, bell pepper, garlic, oregano, thyme, salt, black pepper, cayenne, and tomato sauce. Simmer mixture for 45 minutes stirring occassionally. {Add more boiling water to just cover beans if necessary} Stir in sausage and green onions. Simmer for another 15 to 20 minutes or until beans are tender. Serve over rice.
