Mexican Marigold Mint Vinaigrette

Ingredients:

1/2 C olive oil

3 Tbsp red wine vinegar

3 Tbsp water

1 Tbsp chopped fresh mexican marigold mint leaves

2 Tbsp finely minced fresh parsley

1 clove of garlic crushed

1/2 tsp dijon mustard

salt and pepper if desired 

Directions:
Combine all ingredients and blend well in blender or bowl. Serve over green salad or cooked green beans or carrots.
