Coconut Pound Cake

Ingredients:

2 C flour

2 C sugar

1 C Crisco

5 eggs

2 tsp coconut flavoring

1 1/2 tsp baking powder

1/2 C milk

1 can angel flaked coconut

pinch of salt

For Icing:

1 C sugar

1/2 C water

2 tsp coconut flavoring 

 

Directions:

Cream sugar and Crisco. Add eggs one at a time. Add slt and flavoring. Sift together flour and baking powder. Add alternatively with milk into wet ingredients. Fold in coconut. Bake in  a Bunft pan sprayed with Pam at 350 for 1 hour.

Cool. Take a toothpick and punch holes all over the cake before pouring icing on.

For icing:

Combine ingredients. Bring to a boil. Boil 1 minute. Remove from heat and immediately pour over cake. Let stand 30 minutes before turning out of pan.
