Pedernales River Chili

Ingredients:

4 LBS chili meat

8 Tbsp bacon droppings

1 Large onion

2 cloves of garlic

1 tsp ground oregano

1 tsp cumin

6 tsp chili powder

1 1/2 C canned whole tomatoes

2 cans of kidney beans

2-6 dashes of liquid hot pepper sauce

salt to taste

2 C hot water

 

Directions:
PLace ground meat. onions, garlic, and bacon drippings in large heavy Dutch oven. Cook until light colored. Add oregano,cumin,chili powder, tomatoes,kidney beans, hot pepper sauce, salt and hot water. bring to a boil then lower heat and simmer 1 hour. Skim off any fat during cooking. Serve hot.
