Fruit Cake Cookies

Ingredients:

3/4 C Shortening

11/2 C Brown Sugar

3 eggs

1 LB Candied fruit chopped

1/2 LB pitted dates chopped

3 C Flour sifted

1tsp baking soda\\

3/4 tsp salt

1 tsp cinnamon

1/2 tsp allspice

1/2 C applsauce

1tsp vanilla

1 1/2 C chopped pecans

For frosting:

1LB powdered sugar

1 tsp vanilla

1/4 tsp salt

3 Tblsp water 

 

Directions:

Cream shortening.Add brown sugar and beat with mixer til fluffy. Add eggs one at a time. Beat well after each is added. Add fruit and dates. Sift dry ingredients together.Add to batter alternately with applesauce. Add vanilla and pecans. Drop by heaping tsp onto lightly greased cookie sheet. Bake at 350 for 15 minutes. Cool and frost. Makes more than 100 cookies.

For frosting:

Blend all ingredients together. Additional water may be needed to give desired spreading consistency. Spread a thin layer over tops of cookies.. Decorate as desired.
