Strawberry Stars

Ingredients:

2 1/4 cups all-purpose flour

1/2 teaspoon salt

1 cup butter, at room temperature

1 cup granulated sugar

1 large egg

1 teaspoon vanilla


Directions:

1. Mix flour and salt. Beat butter and sugar in a medium bowl with an electric mixer until fluffy. Beat in egg and vanilla.

2. Gradually beat in flour mixture just until blended.

3. Divide dough in half, wrap in waxed paper and chill 30 minutes or until firm enough to roll.

4. Heat oven to 350 degrees, have cookie sheets ready.

5. On a lightly floured surface, roll 1/2 the dough at a time to 1/4 inch thickness with floured rolling pin. Cut into three inch star shapes. Put half the stars 1 inch apart on cookie sheet. Cut a 1/2 inch star from the center of remaining stars. Chill and reroll scraps.

6. Bake 8 to 10 minutes.

8. Brush centers of whole cookies with some warm strawberry jam. Top each with cutout cookies so points are staggered. spoon additional jam into centers.

9. Cool and store tightly covered between wax paper sheets.
