Chili Con Carne (Oklahoma Style)

Ingredients:
3 pounds chili-grind choice arm roast
10 cloves garlic
2 teaspoons salt
1/2 teaspoon pepper
1 teaspoon cumin
1/2 tablespoon sugar
1/2 teaspoon oregano leaves
4 tablespoons chili powder
2 tablespoons ground crackers (optional)
Directions:
1. Brown the meat lightly in a greased skillet. Remove meat and juices to a heavy dutch oven.

2. Dice the garlic cloves in a food processor. Add to meat. Add enough water to cover meat.

3. Simmer slowly until tender, about 2-3 hours.

4. Add salt, pepper, cumin, sugar and oregano leaves.

5. Dissolve chili powder in some of the meat liquid before adding to the mixture.

6. Simmer 20 to 30 minutes longer. Turn off burner.

7. Add ground crackers. Stir thoroughly.
