Oatmeal Raspberry Almond Muffins

Ingredients:
1 cup quick cooking oats
1 1/2 cups whole wheat flour
1/2 cup sugar (stevia)
1/2 cup sliced almonds
1/2 tsp salt
1 tbls baking powder
3/4 cup skim milk
1/4 cup extra virgin olive oil (or extra applesaurce)
1/4 cup unsweetened apple sauce
1 egg (egg substitute)
1 cup raspberries (fresh or frozen, I used frozen) (or any frozen berry mixture)

Directions:
1. Preheat oven to 400, grease 12 muffin cups
2. In a large bowl combine oats, flour, sugar, nuts, salt and baking powder
3. Stir in milk, oil, applesauce, and egg just until mixed
4. Fold in berries
5. Sprinkle a few oats over each muffin for garnish
6. Bake 20 mins, let cool before removing from pan
