Feta crostini with tomato, bacon, and apple jam

Ingredients:

1/2 lb bacon \"\" \"\"
1 can (28oz) diced tomatoes, drained \"\" \"\"
1 cup sugar \"\" \"\"
1 med apple, peeled, cored, and diced \"\" \"\"
1 small yellow onion, diced \"\" \"\"
3 tbsp cider vinegar \"\" \"\"
1 loaf baguette style french bread, thinly sliced and toasted \"\" \"\"
1 block (8oz) feta cheese, crumbled \"\" \"\"
snipped fresh chives

Directions:

1. in a large skillet over medium heat, cook the bacon until it is just browned, drain and crumble \"\" \"\"
2. in a large saucepan, combine the drained tomatoes, sugar, apple, onion, vinegar, salt, pepper, and bacon. \"\" \"\"
3. bring to a boil over medium heat and cook, stirring often for 12 minutes or until apples are tender \"\" \"\"
4. remove pan from heat. let sit for 5 minutes \"\" \"\"
5. arrange baguette slices on serving platter and top with dollop of warm jam and feta and chives
