Ingredients:
1/2 lb bacon
1 can (28oz) diced tomatoes, drained
1 cup sugar
1 med apple, peeled, cored, and diced
1 small yellow onion, diced
3 tbsp cider vinegar
1 loaf baguette style french bread, thinly sliced and toasted
1 block (8oz) feta cheese, crumbled
snipped fresh chives
Directions:
1. in a large skillet over medium heat, cook the bacon until it is just browned, drain and crumble
2. in a large saucepan, combine the drained tomatoes, sugar, apple, onion, vinegar, salt, pepper, and bacon.
3. bring to a boil over medium heat and cook, stirring often for 12 minutes or until apples are tender
4. remove pan from heat. let sit for 5 minutes
5. arrange baguette slices on serving platter and top with dollop of warm jam and feta and chives
