Yam Casserole

Ingredients:

3 cups Yams 

1/2 c sugar

1/2 tsp salt

2 large eggs

1/4 soft butter

1/2 tsp vanilla extract

1/2 cup milk

1/2 light brown sugar

1/3 cup all purpose flour

1 cup chopped pecans

3 Tbsp soft butter

Directions:

In large bowl combine yams, sugar, salt, eggs, 1/4 cup butter, vanilla, and milk.  Place in a greased 1 1/2 quart baking dish.

In a small bowl, combine brown sugar, flour, pecans, and remaining butter.  Top yam casserole with crumbled mixture.  Bake at 350 for 35 minutes.

 

can make ahead and refrigerate. If chilled bake for 45 minutes

Notes:
boil yams with skin on let cool until you can handle ( the skin peels right off)
