Ingredients:
1 1/2 oz soft tofu
1/2 cup rice or soy milk
1 tsp ground cinnamon
1 tsp good vanilla extract
1 tsp canola oil
2 thick slices of your favorite bread
1 tsp light syrup, a handful of your favorite fruit, some marmalade or preserves, most anything you like to top it off
Directions:
Combine tofu, milk, cinnamon, and vanilla in blender. puree until smooth and pour into shallow bowl.
Heat oil in a wide skillet over med heat. If not nonstick use a little oil.
Dip bread into milk mix and flip to coat the other side. Hold up to allow excess to drip back into the dish.
Place gently in skillet and cook until golden brown on both sides. Turn only once.
Stack on plate and top off as you wish.
