Chocolate Covered Cherry Cookie Cups

Ingredients:
1 Cup softened butter
3/4 Cup brown sugar
3/4 Cup granulated sugar
2 eggs
1 Tablespoon vanilla
2 1/2 Cups flour
1 teaspoon baking soda
1/2 teaspoon salt
1 Cup Chocolate Granola
2 Cups chopped Chocolate Covered Cherries
Directions:
1. Preheat oven to 350 degrees F. In a stand or electric mixer cream the butter and sugars until well combined. Beat in eggs and vanilla until well combined. Place flour, baking soda and salt into a large bowl; mix then add to wet ingredients along with the granola and cherry pieces. With a cookie scoop, scoop into mini muffin tins or mini cheesecake pan as I have used. Bake for 15 minutes or until just golden around edges. Remove and let cool for 5 minutes before transferring to cooling rack.
*If just making normal cookies, bake for 9 minutes and let cool for 5 minutes before transferring to cooling rack.
