Ingredients:
3 cloves garlic
1/2 c pecans
2 c fresh basil leaves (firmly packed)
2T lemon juice
2T olive oil (or more if dry)
Dash cayenne pepper and salt
1/2 c freshly grated parmesan cheese
Directions:
In food processor, chop garlic and nuts. Add basil and oil chop well add rest of ingreedients and blend. Should be chopped enough to spread on a cracker or chip. Leaves should be chopped very well. Serve immediately or freeze in plastic wrap. Keep covered – pesto browns if left open to air but is still good to eat – it just looks bad.
