Quick and Easy Paella

Portion: 4 servings
Ingredients:

1 box rice with saffron

1 tbsp butter

2 links mango and chipotle chicken sausage, sliced

1 boneless, skinless chicken  breast,cut into bite sized pieces

1 small onion chopped

1 roasted red pepper, chopped

1/2 pound sea scallops

1 cup frozen peas

salt and pepper to taste

Directions:

Prepare rice according to directions.

Meanwhile in a large frying pan melt butter; saute onion, sausage and chicken.  When done add red pepper, scallops and peas, salt and pepper to taste.  Place hot saffron rice over top, cover and simmer on low 5 minutes or until scallops are cooked.

Serve and enjoy.
