Chocolate Sheath Cake

Time: 1 Hour
Portion: 8 servings
Ingredients:

  • 2 C sugar
  • 1 tsp cinnamon
  • 2 C flour
  • 4 Tbsp cocoa
  • 1 C water
  • 1 Cup butter
  • 1/2 C buttermilk
  • 2 eggs slightly beaten
  • 1 tsp soda
  • 1 tsp vanilla

        Icing

  • 1/2 C butter
  • 4 Tbsp cocoa
  • 6 Tbsp milk
  • 1 LB powder sugar
  • 1 C pecans
  • 1 tsp vanilla 

Directions:

  • Sift together in a large bowl the sugar, cinnamon and flour.
  • Mix into saucepan cocoa, water and butter.
  • Bring to a rapid boil. 
  • Pour over the flour mixture and stir until well mixed
  • Add buttermilk, eggs, soda, and vanilla
  • Mix well and pour into greased pan. Bake at 350 for 30 minutes.

           Icing

  • Begin 5 minutes before cake is done
  • Boil butter, cocoa and milk
  • Remove from heat and add powdered sugar, pecans and vanilla.
  • Beat until smooth
  • Spread on hot cake 

Notes:
For a thinner cake use a cookie sheet with sides for baking.
