Portion: 8 servings
Ingredients:
- 2 C sugar
- 1 tsp cinnamon
- 2 C flour
- 4 Tbsp cocoa
- 1 C water
- 1 Cup butter
- 1/2 C buttermilk
- 2 eggs slightly beaten
- 1 tsp soda
- 1 tsp vanilla
Icing
- 1/2 C butter
- 4 Tbsp cocoa
- 6 Tbsp milk
- 1 LB powder sugar
- 1 C pecans
- 1 tsp vanilla
Directions:
- Sift together in a large bowl the sugar, cinnamon and flour.
- Mix into saucepan cocoa, water and butter.
- Bring to a rapid boil.
- Pour over the flour mixture and stir until well mixed
- Add buttermilk, eggs, soda, and vanilla
- Mix well and pour into greased pan. Bake at 350 for 30 minutes.
Icing
- Begin 5 minutes before cake is done
- Boil butter, cocoa and milk
- Remove from heat and add powdered sugar, pecans and vanilla.
- Beat until smooth
- Spread on hot cake
Notes:
For a thinner cake use a cookie sheet with sides for baking.
