Baked Squash

Portion: 8 servings
Ingredients:

  • 1 Lb yellow squash 
  • 1/2 C crushed crackers
  • 1/4 C green pepper chopped
  • 1/2 stick butter melted
  • 2 C grated cheese 
  • 1/2 C celery chopped
  • 1 medium onion finely chopped
  • 1 egg beaten
  • pinch of sugar, salt, and pepper

Directions:

  • Cook onion, celery, pepper and squash in water until tender.
  • Drain and mash.
  • Mix all ingredients with squash.
  • Bake at 400 until firm and slightly brown. Put grated cheese on top of squash.
  • Cover casserole with lid to melt cheese.
