Ingredients:
- 1 Lb yellow squash
- 1/2 C crushed crackers
- 1/4 C green pepper chopped
- 1/2 stick butter melted
- 2 C grated cheese
- 1/2 C celery chopped
- 1 medium onion finely chopped
- 1 egg beaten
- pinch of sugar, salt, and pepper
Directions:
- Cook onion, celery, pepper and squash in water until tender.
- Drain and mash.
- Mix all ingredients with squash.
- Bake at 400 until firm and slightly brown. Put grated cheese on top of squash.
- Cover casserole with lid to melt cheese.
