Baked Potato Soup

Ingredients:

4 medium baked potatoes

2 slices of bacon

1/2 cup celery, chopped

1/2 cup green onions, chopped

14.5 oz chicken stock

1 1/2 cup milk

1 garlic clove, pressed

1/2 tsp salt

1/4 tsp pepper

1 cup sour cream

1/2 cup cheddar cheese, shredded

Directions:

Remove skins from baked potatoes (this assumes that the potatoes have already been baked or boiled).

Cube potatoes (or mash your choice).

Cook bacon until crisp.  Reserve 1/2 tsp of drippings (discard the rest).

Crumble bacon and set aside.

Chop celery and green onions

In pan add stock, milk, potatoes, celery, onions, garlic, salt, pepper and bacon drippings  Bring to a boil.  Reduce heat, simmer for 10 minutes.

Stir in sour cream and bacon.

Top with cheddar cheese.
