Berry Poke Cake

Ingredients:

  • 1 pkg. Betty Crocker SuperMoist white cake mix
  • Water, vegetable oil and egg whites as called for in cake mix directions
  • 1 pkg. (4 serving size) strawberry or raspberry flavored gelatin
  • 1 cup boiling water
  • 1/2 cup cold water
  • 1-8 oz. container Cool Whip, thawed

Directions:

  1. Heat oven to 350 degrees. Make cake as directed on box for 9X13 inch pan.  Cool completely, about 1 hour.
  2. Poke cake all over with fork.  In small bowl, stir gelatin and boiling water until dissolved;  stir in cold water.  Pour over cake.  Run knife around sides of pan to loosen cake.  Refrigerate 2 hours.
  3. Spread frosting over top of cake.  Store covered in refrigerator.
