Ingredients:
1 (18 ounce) box spice cake mix
1 (15 ounce) can pumpkin
3 eggs
1/3 cup oil
1/3 cup water
Directions:
Do not follow the directions on the spice cake box!
1. Preheat oven to 350 degrees
2. With mixer, blend all ingredients and beat for two minutes
3. Pour batter into 24 paper-lined muffin cups and fill three-fourths full
4. Bake for 18 to 20 minutes or until toothpick inserted in center comes out clean
5. (Optional) Spread the cupcakes with cream cheese icing
Notes:
The pumpkin cupcakes taste best with the added cream cheese icing. They really make the dessert come together!
