Mahi with Leek, Tomatoes and Mushrooms

Ingredients:

  • 1 Leek julienned
  • Package baby portobello mushrooms washed
  • 1 Tomato diced
  • 1 Tbs Tarragon
  • Garlic Salt
  • Olive Oil
  • 2 filets Mahi rinsed

Directions:

Preheat oven to 350 degrees.   Sautee leek, tomatoes and mushrooms in olive oil until tender.  Add balsamic vinegar.  Add Tarragon.  Pour contents of pan into bowl and set aside.  Sprinkle both sides of filets with garlic salt.  Sear in olive oil.  Place seared filets on cookie sheet.  Spoon sauteed leek, mushrooms and tomatoes on top of filets.  Bake for 10-15 minutes.
