Hash Brown Ham Quiche

4 c shredded frozen hash brown

1/4 t salt

1/4 t pepper

3T butter, divided

1 med onion, chopped

1/2 c chopped green pepper

1/2 c fresh mushrooms

2 T flour

3/4 c diced ham

3 eggs, beaten

1/2 c milk

1/2 c cheddar cheese
In a large skillet, saute hash browns, salt, and pepper in 2 T butter until golden brown. Press into 9\” pie plate (bottom and sides). Saute onion, green pepper, and mushrooms in 1 T of butter. Remove from heat, sprinkle with flour. Stir in ham, eggs, and milk. Pour into crust. Bake at 350* for 30 minutes. Sprinkle with cheese, and bake an additional 5 minutes. Let stand for at least 10 minutes.
