Ingredients:
8 cups water
5 lb. boneless, skinless chicken thighs
8 medium peeled potatoes
3 stalks celery
1 chopped onion
2 cans diced tomatoes (28 oz)
2 cans tomato paste (6 oz)
1 lb. whole corn
3/4 lb. lima beans
2 tbsp salt
1 tbsp black pepper
1 tsp cayenne pepper
Directions:
Boil chicken, potatoes and celery for 30 minutes. Remove chicken and cut into 1" cubes. Discard celery, then mash potatoes. Add other ingredients and bring to a boil, then lower heat and simmer, stirring frequently to prevent sticking. Adjust seasonings. When you can eat it with a fork, it's done!
Notes:
For a healthier dish, refrigerate and skim off fat before adding other ingredients.
