Ingredients:
1 lb. breakfast sausage
Basic breakfast potatoes (or frozen hash brown potatoes)
2 red bell peppers, seeded and roughly chopped
10 eggs
1 tsp. seasoned salt
black pepper
1/4 cup half and half
2 cups grated monterrey jack cheese
12 flour tortillas
Picante sauce
Directions:
Brown breakfast sausage over medium heat, and drain grease then reduce heat to low.
Add breakfast potatoes and bell peppers and stir to combine. Cook over low for 5 mins, stirring occasionally.
Crack the eggs into a bowl. Add the seasoned salt, pepper, and half and half and whisk to beat the eggs lightly. (Optional – add cayenne pepper and dry mustard) Add cheese and stir to combine.
With the heat still on low, pour egg mixture over the sausage/potato mixture. With a spoon gently stir the mixture. Continue cooking until the eggs are set. Add more seasoning if needed.
Warm the stack of tortillas, then place a heaping spoonful of the egg mixture in the middle of each tortilla. Add some extra cheese, then tuck in the sides and roll into a burrito.
Notes:
Can wrap in foil to keep warm until ready to serve. Serve with picante sauce.
