Ingredients:
1 teaspoon butter
3/4 cup cooked spinach (well drained)
1 cup shredded Swiss cheese
3 eggs
1 cup skim milk
2 1/2 cups sliced mushrooms
3/4 teaspoon salt
1/4 teaspoon black pepper
Directions:
-Preheat oven to 350 degrees
-Grease 9" quiche pan with butter
-Arrange 2 cups sliced mushrooms evenly, covering the bottom of the panto form a crust
-Mix all other ingredients, except 1/2 cup of sliced mushrooms, and pour into pan
-Bake for 30 minutes
-Garnish top of quiche with remaining mushrooms and continue bakingfor another 10 minutes.
