Ingredients:
2 lbs. chicken cutlets
Salt & Pepper
3-4 T. flour
1 cup bread crumbs (I use seasoned)
1/3-1/2 cup grated parmesan cheese
1 t. crushed red pepper flakes
2 t. poultry seasoning
1 clove of garlic
1 (3 oz.) jar of pine nuts
1 lemon, zested
2 eggs, beaten
Extra Virgin Olive Oil
Directions:
1. Season the cutlets with salt, pepper, and flour.
2. Combine the next 7 ingredients in a food processor.
3. Transfer mixture to a plate, dip seasoned cutlets in egg, then bread crumb mixture.
4. Cook on skillet until browned on both sides.
Notes:
I prefer to use less lemon zest because it tends to over power it.
