Ingredients:
2 14 oz. cans reduced-sodium chicken broth
1 cup water
2 boneless, skinless chicken breast
2 carrots
1 6 oz. package soba noodles
2 tablespoons reduced sodium soy sauce
1 sliced jalapeño
1 8 oz fresh sugar snap peas
Directions:
Bring the chicken broth and water to a boil.
Add the chicken, carrots, soba noodles, soy sauce and jalapeño, allow to cook over medium heat until chicken is cooked through and noodles are tender.
Add the sugar snap peas, cover, and allow 3 minutes (or more if desired), until peas are tender.
Sprinkle with crushed red peppers and fresh parsley.
