Good Morning Muffins

Ingredients:
3 eggs
1/2 cup sugar
1/2 cup vegetable oil
1 cup grated apples
1 cup grated carrots
1 cup whole wheat flour
1 cup all purpose flour
1 tablespoon baking powder
1/4 teaspoon salt
1 teaspoon cinnamon
Directions:
1. Preheat oven to 375. Lightly grease a 12-cup muffin tin or line it with paper liners adn set aside.

2. Blend the eggs, sugar and oil until well combined.

3. Stir in the apples and carrots.

4. Sift the flours, baking powder, salt and cinnamon. Blend with the other mixture.

5. Spoon batter into the muffin tins and bake for 25 minutes.
