Southwestern Pasta Salad

1 (16 ounce) package penne or bowtie pasta, uncooked
lettuce leaves
1 (15 ounce can black beans, rinsed and drained
1 (8 1/4 ounce) can whole kernal corn, rinsed and drained
1 sweet red pepper, chopped
3 green onions, sliced
1/4 cup chopped fresh cilantro

1 (8 ounce) carton nonfat sour cream
1 (15 ounce) jar mild thick and chunky salsa
1/2 teaspoon ground cumin
2 cloves garlic, minced
1. Combine all dressing ingredients, chill.

2. Cook pasta according to package directions; drain. Rinse with cold water and drain.

3. Combine pasta and 1 3/4 cups dressing; toss gently. Chill.

4. Spoon pasta mixture onto a lettuce lined serving platter. Top with black beans and next four ingredients. Garnish with fresh cilantro sprigs, if desired. Serve with remaining dressing.
