Ingredients:
2 T Canola oil
3/4 C. finely chopped onion
6 Garlic cloves, minced
5 T whole wheat flour
3/4 Ground Cumin
Salt pepper to taste
4 Beef pkgs. Broth & 4 C.t water
1 C chopped, roased and peeled Chilies (or 2 Lrg. Cans)
3/4 t. dried oregano
Directions:
over med. high heat saute the onion and garlic in the oil until tender, about 3 min. stir in the flour, cumin, salt and pepper, and cook over med heat, stirring, for 2 min. stir in the sock and simmer until think and smooth. stir in the chilies and oregano. you may cover the pot and keep it in the frige for up to one day. to serve heat thoroughly.
