Cabbage Soup

Portion: 12 servings
Ingredients:

4 stalks celery diced

4 carrots diced, sliced or julienned

1/2 diced white onion  

sm. can of v8 juice

1st saute onion, carrots, celery in olive oil to soften then add, 1 ck. bullion, 2 C. H20, 1 sm. can v8 juice simmer for 15 min.  **Get a very large pot or divide into 2 large pots!

16 C. H20

1/4 to 1/2 head of cabbage, chopped

3-4 pk. of ck. bouillon

1 1/2 t. salt or more

1 t. thyme— pepper to taste

2 sm. cans v8 juice

1/2 t. creamy garlic out of a jar

1 can of unseasoned petite cut tomatoes or it seasoned,

1/2 C. barley or  seasoned tomatoes.

A box of precooked "Rice a Roni" Rice Pilaf

 

Directions:
Boil for 1 hour or so. You can top w/ fresh grated parm. cheese
