Peanut Butter Sandies

Ingredients:
* 1 3/4 cups all-purpose flour
* 1/2 cup confectioners\’ sugar
* 2 2 tablespoons cornstarch
* 1 1/2 teaspoons baking powder
* 1/2 teaspoon baking soda
* 1/4 teaspoon salt
* 1/2 cup packed light brown sugar
* 1/3 cup reduced-fat chunky peanut butter
* 1/4 cup canola oil
* 1 egg
* 2 tablespoons corn syrup
* 2 teaspoons vanilla
* 1/4 cup sugar

Directions:
1. Preheat the oven to 375�F. Coat 2 baking sheets with no-stick spray.
2. In a medium bowl, combine the flour, confectioners\’ sugar, cornstarch, baking powder, baking soda, and salt. Mix well.
3. In a large bowl, combine the brown sugar, peanut butter, and oil. Using an electric mixer, beat on medium speed until well-blended. Add the egg, corn syrup, and vanilla; beat until well-combined. Stir in the flour mixture (the dough will be crumbly).
4. Form the mixture into 1\” balls. Roll each ball in the sugar and place on the prepared baking sheets, leaving 2\” between balls. Flatten the balls with the bottom of a glass.
5. Bake one sheet at a time for 7 to 8 minutes, or until lightly browned. Remove from the oven and let stand on the baking sheet for 1 minute. Transfer to a wire rack to cool.
