Spinach Puffs

Ingredients:

10 oz  frozen chopped spinach – thawed and drained

1/2 cup carrots, chopped

1 TBL onion, chopped

1/2 cup salad dressing

1/4 tsp nutmeg

1/4 tsp salt

1 cup shredded swiss cheese

1 pkg puff pastry

1 egg lightly beaten

1 TBL water

Directions:

Preheat oven to 425 F

In a medium bowl combine spinach, carrots, onion, salad dressing, nutmeg and salt. Once combined fold in swiss cheese.

Roll out one sheet of puff pastry, cut into sixteen 3 in squares.

Spoon spinach mixture in the center of each square.

Mix egg and water, brush the sides of the squares with the mixture.

For each square bring two opposite corners together and pinch.  Give it a small twist to secure.

Brush the out side with egg mixture.

Bake 17 – 18 minutes or until golden brown.

Repeat steps with second pastry sheet.
