Egg Sausage Souffles

Portion: 6 servings

1 pound fresh bulk sausage

6 eggs, beaten

2 cups milk

1 teaspoon grated onion

1 teaspoon salt

1 teaspoon pepper

1 teaspoon dry mustard

1 cup shredded cheddar cheese

6 slices bread, cubed


Brown and crumble sausage; drain fat. Meanwhile, beat eggs with milk and seasonings. Stir in onion, sausage, cheese and then bread cubes. Pour mixture into greased 13" x 9" baking dish. Cover and refrigerate at least 12 hours.

Bake in preheated oven at 350 for 1 hour. If desired, sprinkle additional cheese over top before baking.
