Easy Cheesy Oven Omlet

1 c. chopped broccoli florets

1/2 c. chopped red or green bell pepper

1/4 c. chopped onion

1 c. shredded cheddar

6 eggs

1 c. cottage cheese

1/2 c. milk

1/4 c. flour

1/2 t. salt

pepper to taste


Sprinkle broccoli, red/green pepper, and onion over the bottom of a lightly greased 7×11 baking dish. Top with cheese. Whisk the eggs, cottage cheese, and milk in a large mixing bowl. Whisk in flour, salt, and pepper. Pour over the vegetable mixture. Bake at 425*  for 20-25 minutes or until inserted knife comes out clean. Let stand for 5 minutes.

*Optional: Add 1 c. of ham or sausage to the vegetable mixture.
