Boned, skinned chicken thighs are just as convenient as breasts, and they have an added advantage: Their succulent texture and robust flavor stand up well to braising. Add the flavors of Italian salsa verde--bright parsley, tart lemon, piquant capers, and green olives--for a fresh, fast twist on cold-weather cooking. Prep and Cook Time: about 45 minutes. Notes: To save prep time, cube the potatoes or mince the garlic and capers while the chicken browns. Then, while the stew simmers, you can chop the parsley and juice the lemon.

Hi guys, I recently heard some absolutely brilliant news from Australia. One of our darling friends Stephanie Alexander has just received government support for an amazing program she's been involved with since 2001, the Kitchen Garden project. This project gets children in Australia involved in planting, growing then cooking and sharing the food from their very own school gardens. Being a part of this project allows kids to build a good knowledge of food and where it comes from early in life, which means they aren't afraid of it or of trying new things. Certainly when I took the apprentices from Fifteen Melbourne to check out one of the gardens it was a real education! Kids that were 7 and 8 years old had a level of knowledge that was incredible and shocked both the apprentices and me. This just shows how open kids are to learning. They are like sponges – absorbing knowledge, touching food, smelling it, tasting it – it's a wonderful thing to see. The new Labour Government and Prime Minister Kevin Rudd have seen the value in the wonderful work that Stephanie and her hard-working team have been doing. They recognised that it was a programme worth supporting and that's why they're backing an Australia-wide rollout of the Kitchen Garden! The project will extend to 190 schools over the next 4 years and there are plans for a further 19,000 primary school children to be reached by this programme by 2011. So I would personally like to applaud Stephanie and her team on the brilliant work that they do. I'd also like to applaud the new Labour Government, Prime Minister Kevin Rudd and Nicola Roxon the Federal Minister for Health. They obviously have realised that good food is important in this day and age, with so many unhealthy and overweight kids. So well done to the Aussies! I reckon the rest of us could learn a thing or two from them. Love Jamie O xxx
