Ingredients:

oil
2 cups corn 2 egg yolks
2 tablespoons onion
2 tablespoons parsley
1/2 teaspoon salt
1/2 teaspoon baking powder
a dash of pepper

 

 

Preparation:

1) Pour oil to 2 to 3 inches.
2) In a medium bowl combine 2 cups corn 2 egg yolks, and 2 tablespoon onion.
3) In a small bowl, mix 2 tablespoon parsley, 1/2 teaspoon salt, 1/2 teaspoon baking powder and a dash of pepper.
4) In a small mixer bowl at high speed beat 2 eggs whites until stiff but not dry. Fold into corn mixture. Drop by teaspoon into hot oil. Fry 2 to 3 minutes or until golden, turning once. Drain on paper towels.
