Irish Potato and Thyme Salad

Ingredients:

1 3/4 pounds small (1 1/2 to 2 inch diameter) red boiling potatoes

1-2 tablespoons fresh thyme leaves and blossoms (to taste)

1/3 cup extra-virgin olive oil

Salt and freshly ground black pepper

Directions:

Combine potatoes with well-salted cold water to cover by 2 inches in a 3 quart saucepan and bring to a boil.  Reduce heat and simmer uncovered until potatoes are just tender, 15 to 20 minutes.  Drain and cool for about 10 minutes.

When potatoes are just cool enough to handle, quarter and put in a large bowl.  Sprinkle with thyme, oil and salt and pepper to taste tossing to coat well.

Serve at room temperature.
