Peanut Brittle

Portion: 10 servings
Ingredients:

  • 1 C light Karo syrup
  • 2 1/4 C sugar
  • 1 C water
  • 2 C chopped unsalted peanuts
  • 3/4 tsp salt
  • 2 Tbsp butter
  • 1/2 tsp baking soda
  • 2 tsp vanilla

Directions:

  • IN a heavy saucepan conbine karo syrup, sugar and water. Stir to blend.
  • PLace over medium high heat and bring to a boil. 
  • Stir until sugar has dissolved.
  • Continue cooking without stirring until the mixture reaches 250 on a candy thermometer.
  • Stir in nuts and continue cooking until mixture reaches 300. Stirring constantly.
  • Remove from heat and quickly stir in salt, butter, baking soda and vanilla.
  • quickly pour mixture onto greased baking sheet and spread into a thin layer.
  • As candy starts to cool turn it over with your hands and stretch it out even more until it is very thin.
  • Allow candy t cool completely. 
  • Break into rough bite suzed pieces.
  • Store in tightly covered container.
