New Brunswick Stew

Ingredients:

8 cups water

5 # boneless, skinless chicken thighs

3 stalks celery

8 medium-sized potatoes

Boil for 30 minutes, remove chicken, cut into 1" cubes.  Discard celery, peel and mash potatoes.

Directions:

Then add…

1 chopped onion

2 cans diced tomatoes (28 oz.)

2 cans tomato paste (6 oz)

1 lb whole corn

3/4 lb lima beans

1 tbsp salt

2 tbsp black pepper

1 tsp cayenne pepper

Notes:
Bring to a boil, then lower heat and simmer.  Adjust seasonings.  When you can eat it with a fork, it’s done!
