Pumpkin Pie Cake

Ingredients:

Pumpkin pie on the bottom:
1 16oz pumpkin (or pumpkin pie flavored)
1 12oz can evaporated mild
3 eggs
1 cup sugar
4 tspns pumpkin pie spice (Trader Joes) – don’t need it if you use the pumpkin pie flavored pumpkin
¼ tspn salt

Topping:
 1 box yellow cake mix
 1 cup butter melted

Directions:

Preheat oven to 350 degrees. 

Pumpkin bie bottom: Mix all the pumpkin bie bottom ingredients until well blended. Pour into a buttered (or Pam sprayed) 9×13 glass dish.

Topping: Sprinkle cake mix over the entire pie mixture covering completely. Then drizzle the melted butter over the topping.

Bake for 45-55 minutes or until knife inserted in middle comes out clean.  Cool and enjoy.
