Sugar-Free Jam

Ingredients:

1 quart whole strawberries

1 cup cherry juice concentrate

1 teaspoon lemon juice

1 packet unflavored gelatin

Directions:
Wash strawberries and remove stems. Mash them with a potato masher. Drain excess juice. Bring cherry concentrate to a rolling boil. Add gelatin and stir for  a full minute. Remove from heat, stir in mashed berries, and add lemon juice. Freeze in canning jars.
