Springtime Egg and Spinach Salad

Ingredients:

1/3 cup Heintz distilled white vinegar

1/3 cup vegetable oil

1 clove garlic, minced

1 teaspoon granulated sugar

1/2 teaspoon salt

dash pepper

1 can (7-3/4 oz) chick peas, drained

6 cups torn fresh spinach, chilled

 10-12 cherry tomatoes, halved

1 small onion, sliced

4 hard-cooked eggs, quartered

Directions:

For Dressing, combine first 6 ingredients in jar. Cover; shake vigorously. Add Chick peas to dressing; chill 1-2 hours. Toss dressing mixture with spinach, tomatoes and onion. Serve in individual salad bowls; arrange egg quarters on top.
