Ham and Asparagus Brunch Bake

2 packages UNCLE BENS Long Grain and Wild Original Recipe Rice

1 pound asparagus, cut into pieces

2 cups ham, chopped

1 cup red bell pepper, chopped

1/4 cup red onion, finely chopped

1 cup cheese (4 oz), shredded


In large saucepan, prepare rice mixes according to package directions, adding the asparagus to the rice mixture during the last 5 minutes of cooling.

Meanwhile, preheat oven to 350. Grease 11" x 7 1/2" baking dish.

When rice has cooked, remove saucepan from heat.

Add ham, bell pepper, and onion; mix well.

Place mixture in prepared baking dish; sprinkle with cheese.

Bake 25-30 minutes or until mixture is heated through.
