2 cup(s) cilantro, fresh, chopped (plus extra for garnish if desired)
1 1/2 cup(s) Nonfat, Plain Greek Yogurt
1 cup(s) mint leaves, fresh, chopped (plus extra for garnish if desired)
1/4 cup(s) reduced-calorie mayonnaise
3 Tbsp red onion(s), diced
1 tsp ginger root, fresh, grated
1 tsp curry powder, Madras variety
3/4 tsp table salt
In a medium bowl, stir together all ingredients until well-mixed.
Transfer to a serving bowl; cover and refrigerate at least 15 minutes for flavors to blend. Yields about 1/4 cup per serving.
Garnish dip with mint and//or cilantro leaves or sprigs. Serve with warm regular or whole-wheat naan, papadum or raw vegetables. There are so many ways to make this recipe. Try leaving out the mayo, adding more yogurt or sprinkling with lime juice to taste.
